Enzyme-rich, lacto-fermented foods and beverages should accompany each meal.

Cortido traditionally accompanies papusas, a corn patty stuffed with cheese and meat. 
We use it on our huevo rancheros:
Scrambled eggs, sausage, raw cheese, homemade raw sour cream. CORTIDO, a dash of hot sauce all ON TOP OF a fried (lard, tallow, or coconut oil) corn tortilla. FOLDED and MESSY! :)

Sauerkraut is made by a process called lacto-fermentation.  There is beneficial bacteria present on the surface of the cabbage and, in fact, all fruits and vegetables. Lactobacillus is one of those bacteria, which is the same bacteria found in yogurt and many other cultured products. 
 
The proliferation of lactobacilli in fermented vegetables enhances their digestibility and increases vitamin levels. These beneficial organisms produce numerous helpful enzymes as well as antibiotic and anticarcinogenic substances.
 Their main by-product, lactic acid, not only keeps vegetables and fruits in a state of perfect preservation but also promotes the growth of healthy flora throughout the intestine. 
Other alchemical by-products include hydrogen peroxide and small amounts of benzoic acid. WAPF.
